  • 2 cups cottage cheese small curd, lightly drained
  • 1 1/2 cups panko breadcrumbs or gluten-free breadcrumbs

Method
 

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper or lightly coat with cooking spray.
  2. Add the cottage cheese to a large mixing bowl and lightly drain off any excess liquid if needed.
  3. Add the panko breadcrumbs to the bowl with the cottage cheese and stir until the mixture is thick, uniform, and holds together when pressed.
  4. Scoop about 1 tablespoon of the mixture, roll it between your palms, and shape it into a small cylinder like a tater tot. Place on the prepared baking sheet and repeat with the remaining mixture, spacing the tots slightly apart.
  5. Place the baking sheet in the oven and bake for 25–30 minutes, flipping the tots halfway through, until they are golden brown and crisp on the outside.
  6. Remove from the oven and let the tots cool on the pan for 5 minutes before serving.

Notes

- If the mixture seems too wet and does not hold a shape, add 1–2 extra tablespoons of breadcrumbs and mix again.
- Dampen your hands lightly with water while shaping to prevent the mixture from sticking.
- Serve with your favorite dipping sauce such as marinara, ketchup, or a yogurt-based dip.
- Leftover tots can be refrigerated in an airtight container for up to 3 days and reheated in a hot oven or air fryer until crisp.
