- In a bowl, whisk together honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper.

- Rinse the rice under cold water until it runs clear. Cook in boiling chicken broth for about 15 minutes.
- Preheat grill to medium-high heat. Grill marinated chicken for 6–7 minutes per side.
- In a bowl, gently combine diced avocado, red onion, cilantro, and olive oil.
- Layer the rice, grilled chicken, and spoon over the avocado mix.
- Serve with lime wedges.
