  • 4 pieces chicken breasts boneless, skinless
  • 3 tablespoons honey
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon lime zest
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • Salt to taste
  • Pepper to taste
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 2 pieces avocado diced
  • 1 small red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon olive oil
  • 4 pieces lime wedges for garnish

Method
 

  1. In a bowl, whisk together honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper.
  2. Place chicken breasts in a resealable bag or dish, pour the marinade over them, and let marinate for 30 minutes to 2 hours.
  3. Rinse the rice under cold water until it runs clear. Cook in boiling chicken broth for about 15 minutes.
  4. Preheat grill to medium-high heat. Grill marinated chicken for 6–7 minutes per side.
  5. In a bowl, gently combine diced avocado, red onion, cilantro, and olive oil.
  6. Layer the rice, grilled chicken, and spoon over the avocado mix.
  7. Serve with lime wedges.

Notes

- Marinate chicken for up to 2 hours for deeper flavor.
- Prepare avocado mix just before serving to avoid browning.
