  • 4 cups sweet potatoes cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 1/2 cup sour cream
  • Optional toppings: crumbled cheese lime wedges, tortilla chips

Method
 

  1. Preheat oven to 425°F.
  2. Toss sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  3. Heat a skillet over medium heat. Cook ground beef until browned, about 6-8 minutes. Stir in taco seasoning and a splash of water, simmer for 2-3 minutes.
  4. Assemble bowls with roasted sweet potatoes, taco beef, pico de gallo, guacamole, and sour cream.
  5. Garnish with cilantro, lime wedges, cheese, and tortilla chips as desired. Serve immediately.

Notes

- Substitute ground beef with turkey, chicken, or black beans.
- Greek yogurt can be used instead of sour cream.
