  • 0.75 lb boneless skinless chicken breasts
  • 1/4 cup lime juice
  • 1/2 tsp chili powder
  • 1 tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper sliced
  • 1 jalapeño sliced
  • 1 cup black beans drained and rinsed
  • 3/4 cup corn kernels
  • 1/4 cup cotija cheese
  • 1 tbsp olive oil

Method
 

  1. Marinate diced chicken in olive oil, lime juice, chili powder, and chipotle pepper for 15 minutes.
  2. Cook rice as per package instructions.
  3. Sauté marinated chicken in a skillet over medium heat for 12–15 minutes until cooked through.
  4. Sauté red bell pepper and jalapeño in the same skillet, adding garlic at the end.
  5. Warm tortillas and assemble wraps with rice, chicken, beans, corn, cheese, and veggies.
  6. Roll tightly and serve immediately.

Notes

- For extra flavor, marinate the chicken overnight.
- Customize with avocado or your favorite sauce.
