Ingredients
  

  • 2 cups water
  • 1 cup granulated sugar
  • 2 large mangoes or your favorite fruit
  • 8 cups ice

  • Tajín chamoy, or extra diced fruit.

  • Make the Fruit Syrup
  • In a medium saucepan, bring the water and sugar to a boil, stirring occasionally until the sugar dissolves. Add diced mangoes (or any fruit of your choice) and cook over medium heat for 10 minutes until they soften.

  • Cool the Syrup
  • Allow the syrup to cool for at least 30 minutes. This gives it time to thicken and lets the flavors intensify.
  • Prepare the Shaved Ice
  • Crush ice in a blender until it reaches a snow-like texture. Scoop it into cups, packing it tightly to hold its shape.

  • Assemble Your Raspados
  • Drizzle ¼ cup of the cooled fruit syrup over the shaved ice. For extra flair, garnish with diced mangoes, a sprinkle of Tajín, or a drizzle of chamoy.

Notes

Use your favorite fruit to make the syrup, such as raspberries, blueberries, or peaches.
