  • 1 cup black beans drained and rinsed.
  • 1/3 cup corn salsa – Trader Joe’s corn salsa adds a sweet and tangy twist.
  • 1 cup grape tomatoes halved or quartered.
  • 1 small Persian cucumber diced.
  • 1 bell pepper diced (yellow, red, or orange for sweetness).
  • 1/4 red onion minced.
  • 1/4 cup pickled jalapeños minced (for a spicy kick).
  • 1/2 cup green onions chopped.
  • 1/2 cup fresh cilantro chopped.
  • For the Dressing:

  • 1 tablespoon pickled jalapeño juice for tangy heat.
  • 2 tablespoons lime juice freshly squeezed is best!.
  • 1/3 cup mayonnaise – try avocado oil mayo for a healthier twist.
