Mexican Lasagna with Tortillas

This Mexican lasagna recipe is an irresistible blend of ground beef, refried beans, tortillas, and cheese, layered together and baked to perfection. It’s comfort food with a Tex-Mex twist!

Ingredients
  

  • lbs ground beef or ground turkey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • ¼ teaspoon cayenne pepper
  • 1 14 oz can refried beans
  • 1 red bell pepper chopped
  • 2 medium onions chopped
  • 3 cloves garlic minced
  • 1 28 oz can fire-roasted tomatoes
  • 1 7 oz can diced green chiles
  • ½ teaspoon dried oregano
  • 12 6-inch corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded cheddar cheese

Optional Toppings

  • Sour cream
  • Avocado slices
  • Fresh cilantro
  • Shredded lettuce

Instructions
 

  • Cook the Ground Beef
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add ground beef and sprinkle with salt, chili powder, cumin, coriander, and cayenne.
  • Cook until browned, then transfer to a bowl.

  • Prepare the Sauce
  • In the same skillet, sauté onions and bell pepper for 5 minutes.

  • Add garlic, fire-roasted tomatoes, green chiles, and oregano.
  • Simmer for 15-20 minutes.

  • Soften the Tortillas
  • Lightly fry each tortilla in a skillet with a little olive oil for 5 seconds per side.
  • Drain on paper towels.
  • Assemble the Lasagna
  • Preheat oven to 350°F (175°C).
  • In a greased 9x13-inch baking dish, layer:
  • 4 tortillas, overlapping slightly
  • Half the refried beans, spread evenly
  • Half the cooked beef
  • A third of the cheese
  • Half the tomato sauce

  • Repeat layers and finish with tortillas and remaining cheese.
  • Bake
  • Cover with foil and bake for 35 minutes.
  • Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.

  • Serve
  • Let it rest for 10 minutes.
  • Top with sour cream, avocado, cilantro, or lettuce.

  • Freezing: Freeze in portions for up to 3 months. Reheat covered at 350°F.
