  • 1 lb ground chicken
  • 1 packet ranch seasoning mix
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 2 tbsp chopped parsley
  • Olive oil or cooking spray

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, ranch seasoning, egg, breadcrumbs, and garlic powder until just combined.
  3. Shape mixture into golf ball-sized bombs and place on the prepared baking sheet.
  4. Lightly spray or brush with olive oil.
  5. Bake for 18–22 minutes or until cooked through and golden.
  6. Top each bomb with mozzarella and broil for 1–2 minutes until cheese is melted and bubbly.
  7. Garnish with chopped parsley and serve warm.

Notes

- Use almond flour for a low-carb version.
- These can be frozen before baking for up to 3 months.
