Method
- Microwave mozzarella and cream cheese until melted, about 1-2 minutes. Stir to combine.
- In a bowl, whisk eggs, almond flour, baking powder, parmesan, and salt.
- Fold melted cheese into dry ingredients to form dough.
- Cover and refrigerate for at least 4 hours.
- Preheat oven to 350°F (175°C).
- Divide dough into 8 pieces, roll into balls, and flatten to ¼ inch thick.
- Place flatbreads on a parchment-lined baking sheet. Bake for 15-17 minutes.
- Heat olive oil and butter, add garlic, cook until golden.
- Brush baked flatbreads with garlic butter, sprinkle with extra parmesan.
- Enjoy warm as a side or base for toppings.
