Ingredients

  • 6 cups vegetable broth chicken or beef broth works too
  • 2 cups onions diced (white or yellow onions are perfect)
  • 1 cup celery diced
  • 1 cup carrots peeled and diced
  • 1 tbsp garlic minced
  • ½ tsp fresh ginger minced
  • 1 tsp sesame oil for that nutty aroma
  • 1 cup button mushrooms thinly sliced
  • ½ cup scallions sliced (for garnish)
  • Salt and pepper to taste
  • Optional: Soy sauce coconut aminos, or sriracha for extra flavor

Instructions

  • Sauté the Onions: Heat a bit of oil in a pot and toss in the diced onions. Let them caramelize slightly for about 10 minutes. This step is key to unlocking their natural sweetness.
  • Add the Veggies: Throw in the carrots, celery, garlic, and ginger. Drizzle in the sesame oil and give everything a good stir.
  • Pour in the Broth: Add the vegetable broth and season with salt and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  • Strain the Soup: Once the flavors have melded, strain out the solid ingredients. (Pro tip: Don’t toss them! Use the veggies in another dish for zero waste.)
  • Garnish and Serve: Ladle the clear broth into bowls and top with sliced scallions and mushrooms. Add a splash of soy sauce or sriracha if you like a bit of extra kick.

For a Paleo or Whole 30-compliant version, substitute soy sauce with coconut aminos.
The strained vegetables can be reused in other meals to reduce waste.
Adjust the seasoning with soy sauce or sriracha for added flavor.
