  • 1 low-carb tortilla like Mission Carb Balance
  • 1/2 cup shredded cooked chicken
  • 1 tablespoon plain Greek yogurt
  • 1 Laughing Cow cheese wedge
  • 1/4 cup shredded mozzarella cheese
  • 1/2 teaspoon ranch seasoning
  • 1/2 tablespoon butter

Method
 

  1. In a bowl, mix shredded chicken, Greek yogurt, Laughing Cow cheese, mozzarella, and ranch seasoning.
  2. Lay the tortilla flat and spread the chicken mixture on one half.
  3. Fold the tortilla over the filling to form a half-moon.
  4. Melt butter in a skillet over medium heat.
  5. Cook the quesadilla for 2-3 minutes on each side until golden brown.
  6. Let rest for 1 minute before slicing and serving.

Notes

- Shred your own cheese for better melting.
- Use rotisserie chicken for convenience.
