  • 4 slices low-carb bread
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 cup shredded mozzarella cheese
  • Pinch of salt
  • Optional: Fresh parsley chopped, for garnish

Method
 

  1. In a small bowl, mix butter, minced garlic, and salt until smooth.
  2. Spread garlic butter evenly over one side of each bread slice.
  3. Heat a non-stick skillet over medium heat.
  4. Place 2 slices of bread, buttered side down, in the skillet.
  5. Sprinkle half the mozzarella cheese on top.
  6. Cover with remaining bread slices, buttered side up.
  7. Cook for 3-4 minutes per side, until bread is golden and cheese is melted.
  8. Press gently with a spatula to bind the bread and cheese.
  9. Garnish with parsley if desired. Serve hot.

Notes

- Make-ahead option: Assemble sandwiches and store in the fridge for up to 24 hours before grilling.
- For longer storage, freeze individually wrapped cooked sandwiches for up to 1 month.
