  • 1 small bag fresh baby spinach
  • 1 dash pepper
  • 1 dash Herb and Garlic Seasoning
  • 8 oz shredded mozzarella cheese
  • 6 thin sliced chicken breasts
  • 1 container green onion cream cheese softened
  • 0.25 cup olive oil
  • 0.5 cup chicken broth
  • 1 large package sliced mushrooms cremini or white button mushrooms

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Wipe mushrooms clean and slice if needed. Ready the spinach.
  3. Pour olive oil into a baking dish, spreading evenly. Layer with spinach and mushrooms.
  4. Arrange chicken breasts over mushrooms. Season with pepper and Herb and Garlic Seasoning.
  5. Dollop cream cheese over chicken. Spread slightly if desired.
  6. Pour chicken broth around the dish. Sprinkle mozzarella over everything.
  7. Bake for 30-40 minutes until chicken is cooked and cheese is bubbly and golden.
  8. Remove from oven and let rest for 5-10 minutes before serving.

Notes

- Ensure chicken is cooked through with a thermometer (165°F).
- Letting the dish rest helps juices redistribute.
