Method
- 1. Preheat the oven to 350°F and grease a silicone muffin tray.
- 2. In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
- 3. Pour about 1/4 cup of the egg mixture into each muffin cavity.
- 4. Add your chosen mix-ins and shredded cheese to each cup. Stir gently and top with extra cheese if desired.
- 5. Bake for 18-22 minutes until the centers are just set. Let cool slightly before removing.
Notes
Store in an airtight container in the fridge for up to 5 days.
Reheat in the microwave for 20-30 seconds before serving.
Can be frozen for up to 2 months; thaw overnight before reheating.
