Easy Cottage Cheese Egg Bites: A Breakfast Game-Changer

Ingredients
  

  • 8 large eggs
  • 1 cup cottage cheese 0%-2% fat
  • 1/2 cup shredded cheese cheddar or feta
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Optional mix-ins up to 1 cup total: chopped fresh spinach, diced bell peppers, broccoli florets, cooked sausage, diced turkey bacon

Method
 

  1. 1. Preheat the oven to 350°F and grease a silicone muffin tray.
  2. 2. In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
  3. 3. Pour about 1/4 cup of the egg mixture into each muffin cavity.
  4. 4. Add your chosen mix-ins and shredded cheese to each cup. Stir gently and top with extra cheese if desired.
  5. 5. Bake for 18-22 minutes until the centers are just set. Let cool slightly before removing.

Notes

Store in an airtight container in the fridge for up to 5 days.
Reheat in the microwave for 20-30 seconds before serving.
Can be frozen for up to 2 months; thaw overnight before reheating.
