Method
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onions and bell peppers; sauté until softened.
- Stir in taco seasoning, diced tomatoes, and cauliflower rice; mix well.
- Layer half of the mixture in a baking dish and sprinkle with half of the cheese. Repeat layers.
- Bake uncovered for 25-30 minutes until bubbling and golden.
