  • 1 lb lean ground beef or turkey
  • 2 medium bell peppers red and green, chopped
  • 1 medium onion chopped
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheddar cheese
  • 14 oz can diced tomatoes drained
  • 2 cups cauliflower rice

Method
 

  1. Preheat oven to 350°F.
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add onions and bell peppers; sauté until softened.
  4. Stir in taco seasoning, diced tomatoes, and cauliflower rice; mix well.
  5. Layer half of the mixture in a baking dish and sprinkle with half of the cheese. Repeat layers.
  6. Bake uncovered for 25-30 minutes until bubbling and golden.

Notes

- You can substitute ground turkey for beef for a leaner option.
- Freeze the uncooked casserole for up to 3 months for easy make-ahead meals.
