Method
- In a medium bowl, add the softened cream cheese, powdered sweetener, vanilla bean paste, and 1 tsp of the ground cinnamon.
- Beat the mixture with a hand mixer or whisk until smooth, creamy, and easily spreadable.
- Lay the low-carb tortillas flat on a clean work surface.
- Divide the cream cheese mixture evenly among the tortillas.
- Spread the filling in a thin, even layer over each tortilla, leaving about 1/4 inch border around the edges.
- In a small bowl, stir together the remaining 1 tsp ground cinnamon and the granular sweetener.
- Lightly sprinkle a small pinch of the cinnamon–granular sweetener mixture over the cream cheese on each tortilla.
- Starting from one edge, roll each tortilla up tightly into a log, keeping the filling tucked inside.
- If your tortillas are large, tuck in the ends slightly as you roll to help keep the filling from escaping.
- Brush the outside of each roll up all over with the melted butter.
- Roll or sprinkle each buttered roll up in the remaining cinnamon–granular sweetener mixture to coat the outside lightly.
- Heat a large nonstick skillet over medium heat.
- Place the roll ups seam-side down in the hot skillet, leaving space between each one.
- Cook for 2 to 3 minutes per side, turning with tongs, until all sides are golden brown and crisp.
- Continue turning and toasting the roll ups until they are evenly browned on all sides and the filling feels warm.
- Remove the roll ups from the skillet and transfer them to a plate to cool slightly.
- Let the roll ups sit for 3 to 5 minutes before serving so the filling can set and avoid burns.
- Slice each roll up in half on the diagonal if desired and serve warm.
Notes
- Use low-carb tortillas that are soft and flexible so they roll easily without cracking.
- For an air fryer version, cook the buttered and coated roll ups at 375°F for 6 to 8 minutes, turning halfway through, until crisp and golden.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a skillet or air fryer to re-crisp.
- For extra flavor, add a pinch of nutmeg or a drop of maple extract to the cream cheese mixture.
