Ingredients
  

  • 200 g margarine or unsalted butter
  • 200 g soft brown sugar
  • 120 ml 8 tbsp golden syrup
  • 400 g porridge oats
  • 200 g jar of mincemeat

Instructions
 

  • Preheat and Prep: Start by preheating your oven to 160°C/325°F/Gas Mark 3. Grease a baking tray (roughly 12 x 9 inches) to prevent sticking.
  • Melt and Mix: In a saucepan, melt the margarine over low heat. Add the brown sugar and golden syrup, stirring until everything melts together into a gooey, caramel-like mixture.
  • Combine and Create: Remove the pan from the heat and stir in the porridge oats and mincemeat. Mix until every oat is coated and the mincemeat is evenly distributed.
  • Bake and Slice: Spread the mixture onto your prepared baking tray, pressing it down firmly with the back of a spoon. Bake for 25 minutes or until golden brown. Once out of the oven, slice the flapjacks while they’re still warm, then let them cool completely in the tray.

Notes

  • These flapjacks keep well in an airtight container for up to 5 days.
  • You can freeze them, though it hasn’t been tested by the author.
  • For added flair, drizzle melted chocolate or icing on top after baking.
