Ingredients
  

  • lbs ground beef or ground turkey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • ¼ teaspoon cayenne pepper
  • 1 14 oz can refried beans
  • 1 red bell pepper chopped
  • 2 medium onions chopped
  • 3 cloves garlic minced
  • 1 28 oz can fire-roasted tomatoes
  • 1 7 oz can diced green chiles
  • ½ teaspoon dried oregano
  • 12 6-inch corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded cheddar cheese

  • Sour cream
  • Avocado slices
  • Fresh cilantro
  • Shredded lettuce

Instructions
 

  • Cook the Ground Beef
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add ground beef and sprinkle with salt, chili powder, cumin, coriander, and cayenne.
  • Cook until browned, then transfer to a bowl.

  • In the same skillet, sauté onions and bell pepper for 5 minutes.
