Description
Creamy Tuscan chicken with garlic, sun-dried tomatoes, spinach, and parmesan in a velvety sauce. A rustic Italian-inspired dish that’s simple yet elegant.
Ingredients
4 boneless skinless chicken breasts
2 tbsp olive oil
3 garlic cloves, minced
1 small onion, finely chopped
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated parmesan cheese
1 tsp dried oregano
1/2 tsp dried thyme
Salt and black pepper, to taste
Fresh basil, for garnish
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden, about 5 minutes per side. Remove and set aside.
3. In the same skillet, sauté onion and garlic until fragrant.
4. Stir in sun-dried tomatoes and cook for 1–2 minutes.
5. Add chicken broth and heavy cream, stirring to combine.
6. Stir in parmesan cheese and herbs until sauce thickens slightly.
7. Add spinach and cook until just wilted.
8. Return chicken to the pan, spoon sauce over the top, and simmer for 5–7 minutes until fully cooked.
9. Garnish with fresh basil before serving.
Notes
Serve with pasta, mashed potatoes, or crusty bread to soak up the creamy sauce.
Use chicken thighs for a juicier option.
Add a splash of white wine for extra depth of flavor.
