Ingredients
1 pound ground beef
1/2 small onion, diced
6 ounces softened cream cheese
20 ounces diced tomatoes with green chilies (2 cans)
1/2 cup heavy cream
2 1/2 cups beef stock
1 teaspoon garlic powder
1 packet taco seasoning
Salt and pepper to taste
Instructions
1. Place a large pot over medium heat. Add ground beef and onion; cook until beef is browned, about 8-10 minutes. Drain excess grease.
2. Add softened cream cheese; stir until melted and combined.
3. Add tomatoes with green chilies, beef stock, heavy cream, garlic powder, and taco seasoning. Stir well.
4. Reduce heat to low; simmer for 30 minutes, stirring occasionally.
5. Taste and season with salt and pepper. Serve hot with desired garnishes.
Notes
Swap ground beef for turkey or chicken for a lighter version.
For more heat, add cayenne pepper or jalapeños.
