Sugar Free Strawberry Pie – Ultimate 3-Step Sweet Treat

Description

A fresh and flavorful sugar free strawberry pie made with ripe berries, orange zest, and no refined sugar. The perfect summer dessert!


Ingredients

Scale

1 ready-made pie crust, baked and cooled

8 cups fresh strawberries, hulled and quartered

1/2 cup Whole Earth sweetener or 2/3 cup sugar

2 tbsp freshly squeezed orange juice

3 tbsp cornstarch

1 tbsp water

1 tsp orange zest

1/2 tsp salt

For Homemade Whipped Cream:

3 cups heavy whipping cream

1 tbsp Whole Earth sweetener

2 tsp vanilla extract


Instructions

1. Zest and juice your orange. Set aside 2 tbsp juice.

2. Wash, hull, and quarter strawberries. Pat dry with paper towels.

3. Set aside 1/4 of strawberries and mash them in a saucepan.

4. Add orange juice, zest, water, cornstarch, sweetener, and salt. Stir.

5. Cook over medium heat until mixture thickens, about 3–5 mins.

6. Remove from heat and fold in remaining fresh strawberries.

7. Pour into pre-baked pie shell and chill 2–3 hours to set.

8. In a bowl, whip cream with sweetener and vanilla until stiff peaks form.

9. Serve pie chilled with fresh mint and whipped cream if desired.

Notes

Use ripe, in-season strawberries for best flavor.

Filling can be made ahead and chilled separately.

Whole Earth sweetener is a blend of stevia, monk fruit, and erythritol.

Pie stores well in fridge for up to 3 days.
