Description

A zesty and satisfying spicy chili lime chickpea cauliflower wrap made with roasted chickpeas, seasoned cauliflower, and a refreshing chili-lime kick wrapped in soft tortillas.


Ingredients

Scale

1 medium head cauliflower, cut into florets

1 can (15 oz) chickpeas, drained and rinsed

2 tbsp olive oil

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp garlic powder

1/2 tsp salt

Juice and zest of 1 lime

4 tortillas or cauliflower wraps

1 cup shredded lettuce

1 avocado, sliced

Optional: vegan ranch or tahini sauce


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Pat chickpeas dry with a paper towel. Toss chickpeas and cauliflower florets with olive oil, chili powder, paprika, cumin, garlic powder, and salt.

3. Spread evenly on the baking sheet and roast for 25–30 minutes, stirring halfway, until golden brown and crisp.

4. Remove from oven and drizzle with lime juice and zest.

5. Warm tortillas or cauliflower wraps.

6. Assemble wraps with roasted chickpeas, cauliflower, lettuce, avocado, and sauce of choice.

7. Fold and serve immediately.

Notes

For extra spice, add cayenne pepper to the roasting mix.

Leftovers store in the fridge for 3–4 days in airtight containers.

Try swapping tortillas with pita bread for variety.
