Ingredients
1 cup pumpkin puree (unsweetened)
1 cup whipped cream or Greek yogurt
3 tbsp maple syrup or brown sugar
1 tsp pumpkin spice blend
1 tsp vanilla extract
1 cup granola or crushed cookies
Optional: caramel sauce, extra whipped cream
Instructions
1. In a mixing bowl, combine pumpkin puree, pumpkin spice, sweetener, and vanilla extract.
2. Fold in whipped cream (or yogurt) until smooth and fluffy.
3. In serving glasses, add a layer of granola or cookie crumbs.
4. Top with pumpkin cream, then repeat layers until full.
5. Finish with whipped cream, sprinkle of pumpkin spice, and optional caramel drizzle.
Notes
Make pumpkin cream up to 2 days ahead.
