Ingredients

1 cup milk
2 large eggs
1/4 tsp salt
1 cup savory fillings (cooked sausage, diced bell peppers)

Instructions
1. In a large bowl, mix flour, baking powder, and salt.
2. In another bowl, whisk milk and eggs until frothy.
3. Combine both mixtures gently to avoid tough pancakes.
4. Heat a non-stick skillet over medium heat with butter.
5. Pour 1/4 cup of batter onto the skillet; cook until bubbles form and edges set, then flip to golden brown.
6. Once flipped, add savory filling to one half of the pancake.
7. Fold over to create a taco shape and cook for another minute.
8. Transfer filled tacos to plates and top with avocado slices or salsa.
