Crunchy, golden roasted pumpkin seeds – a healthy, versatile snack you can season sweet or savory.
Ingredients
1 medium pumpkin
1 tbsp salt
1 tbsp extra virgin olive oil
Instructions
1. Cut open the pumpkin and scoop out the seeds.
2. Rinse seeds under water, removing pulp.
3. Boil seeds in salted water for 10 minutes.
4. Drain and pat dry.
5. Toss seeds with olive oil.
6. Spread on baking sheet.
7. Roast at 400°F for 10–20 minutes until golden.
8. Cool completely before serving.
Notes
Jazz them up with smoked paprika, cumin, or cinnamon sugar before roasting for fun flavor twists.
