Description

A quick and easy vegetable side dish with minimal prep and delicious flavor.


Ingredients

Scale

1 bunch asparagus

1 bunch baby carrots or 3 large carrots

2 tbsp extra virgin olive oil

Sea salt

Black pepper


Instructions

1. Preheat the oven to 425°F.

2. Halve baby carrots or slice large carrots into thin strips.

3. Trim woody ends of the asparagus.

4. Line a large sheet pan with parchment paper or foil.

5. Toss carrots with olive oil, sea salt, and pepper on the pan.

6. Roast carrots for 5 minutes.

7. Add asparagus to the pan, toss gently, and spread in a single layer.

8. Roast for an additional 10-15 minutes until vegetables are tender.

Notes

Use fresh, firm asparagus for best results.
