Description

Mouthwatering cheesy goodness with taco soup delicious is quick and easy.


Ingredients

Scale

1 lb ground beef

1/2 small onion, chopped

6 oz cream cheese, softened

2 10 oz cans Rotel

1/2 cup heavy whipping cream

2 1/2 cups beef broth

1 tsp garlic powder

1 packet taco seasoning

Salt and pepper to taste


Instructions

1. Brown ground beef and onions together, then drain.

2. In a large saucepan, add ground beef and softened cream cheese on low/medium heat. Stir to mix well.

3. Add Rotel, heavy cream, beef broth, garlic powder, and taco seasoning. Simmer on low for 30 minutes.

4. Add salt and pepper to taste.

Notes

Serve topped with freshly grated cheese, sour cream, jalapenos, and/or guacamole.

For slow cooker: Add all except cream cheese and heavy cream first. Cook beef and onion, then add cream cheese and heavy cream in the last hour.
