Muffin Breakfast Pizza: A Quick Morning Delight Transformation

Description

These English Muffin Breakfast Pizzas are made like a savory French toast and topped with your favorite omelet fillings!


Ingredients

Scale

6 whole wheat English muffins

4 eggs

2 tablespoons milk

1/4 teaspoon kosher salt

10 dashes Tabasco sauce

12 slices deli turkey bacon or 10 slices cooked turkey bacon, crumbled

1 cup shredded cheddar or pepper jack cheese

Optional: Chopped vegetables (green onions, tomatoes, olives, mushrooms, green peppers)


Instructions

1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.

2. In a pie plate, whisk eggs, milk, salt, and Tabasco sauce.

3. Split each English muffin and soak each side in the egg mixture. Place on the baking sheet, cut side up.

4. Top with turkey bacon or turkey bacon. Add optional vegetables and sprinkle with cheese.

5. Bake for 15 minutes. Serve immediately.

Notes

For freezing, cool completely, then freeze on a baking sheet. Transfer to a Ziploc bag. Reheat in the microwave for 1.5 minutes or in the oven at 350 degrees for 10 minutes.
