Description

This recipe combines tender chicken breast, fresh mozzarella, sun-ripened cherry tomatoes, and aromatic basil for a satisfying meal bursting with flavor. A true crowd-pleaser!


Ingredients

4 boneless, skinless chicken breasts

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

2 tablespoons olive oil

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 tablespoon balsamic vinegar

1 cup fresh basil leaves, roughly chopped

8 oz fresh mozzarella cheese, sliced

1 tablespoon Italian seasoning

1 tablespoon chopped fresh parsley (optional for garnish)


Instructions

1. Preheat your oven to 375°F (190°C).

2. Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

3. In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the chicken and sear on both sides until golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Add the halved cherry tomatoes and cook for another 5 minutes until they start to soften.

5. Stir in the balsamic vinegar and half of the chopped basil, allowing the flavors to meld for about 2 minutes.

6. Return the chicken to the skillet, nestling it among the tomatoes. Top each chicken breast with slices of fresh mozzarella, and sprinkle over the Italian seasoning.

7. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and the cheese is melted and bubbly.

8. Remove from the oven and let it rest for a few minutes. Top with the remaining basil leaves and, if desired, some chopped fresh parsley for color.

9. Serve hot, spooning the tomato and basil sauce over the chicken.

Notes

This dish pairs excellently with a side of pasta or a fresh green salad.

To make it even more aromatic, add a few sprigs of fresh thyme before baking.

If you prefer spiciness, sprinkle some red pepper flakes over the cheese before baking.

Fresh mozzarella works best, but you can also use shredded if that’s what you have on hand.

This dish is a celebration of fresh ingredients, so use the best quality mozzarella and basil available.
