Description
A creamy, healthy, and family-friendly low carb chicken casserole made with chicken, broccoli, and a rich sauce.
Ingredients
3 cups cooked shredded chicken
2 cups broccoli florets
1 cup cream cheese (softened)
1/2 cup sour cream or cream of chicken soup
1 cup shredded cheddar cheese
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a casserole dish.
2. Steam broccoli until just tender and bright green.
3. In a large bowl, mix cream cheese, sour cream (or cream of chicken soup), garlic powder, onion powder, salt, and pepper.
4. Fold in shredded chicken and steamed broccoli until evenly coated.
5. Transfer mixture to casserole dish and top with shredded cheese.
6. Bake for 25 minutes or until hot and bubbly.
7. Let rest for 5 minutes before serving.
Notes
Make ahead: Assemble up to a day in advance and refrigerate.
To freeze: Wrap unbaked casserole tightly and freeze for up to 3 months.
Variation: Swap broccoli for cauliflower or add bacon for extra flavor.
