Description

This lasagna soup is a cozy one-pot meal packed with pasta, tomatoes, herbs, and creamy cheese.


Ingredients

8 oz lasagna noodles

1 lb Italian sausage or ground beef

1 onion, diced

3 garlic cloves, minced

28 oz crushed tomatoes

4 cups chicken or vegetable broth

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes

1 cup ricotta cheese

1 cup shredded mozzarella

1/2 cup parmesan

2 tbsp olive oil

Salt and pepper to taste

Fresh basil for garnish


Instructions

1. Heat olive oil in a large pot, sauté onion, garlic, and sausage until browned.

2. Add crushed tomatoes, broth, oregano, basil, red pepper flakes, salt, and pepper. Stir.

3. Bring to a simmer, then add broken lasagna noodles.

4. Cook until noodles are tender, about 15 minutes.

5. Ladle soup into bowls and top with ricotta, mozzarella, and parmesan.

6. Garnish with fresh basil and serve with crusty bread.

Notes

You can substitute sausage with ground turkey or keep it vegetarian by using mushrooms and zucchini.

For a crockpot version, add all ingredients (except cheese) and cook on low for 6–8 hours.
