Description
A cheesy keto taco casserole that’s loaded with beef, seasoning, and gooey cheese. Just 3g net carbs per serving—perfect for weeknight dinners or meal prep.
Ingredients
2 pounds ground beef
1/2 large onion, diced
2 cloves garlic, minced
1/2 large bell pepper, diced
1 packet of taco seasoning (or 4 tablespoons homemade)
4 eggs
2 cups Mexican cheese, shredded
Instructions
1. Preheat oven to 350°F. In a skillet over medium-high, brown the ground beef with peppers, onions, and garlic.
2. Drain excess oil and return beef to pan. Stir in taco seasoning.
3. Transfer beef to casserole dish and spread evenly.
4. In a bowl, whisk eggs with half the cheese. Pour over beef and stir slightly.
5. Top with remaining cheese and bake uncovered for 25 minutes until bubbly and golden.
6. Remove from oven, top with green onions, tomatoes, or sour cream. Serve hot.
Notes
To reduce carbs even more, omit onions and add green chilis.
