Description
This fluffy and creamy keto strawberry mousse is an easy low-carb dessert with just 4 ingredients and minimal prep.
Ingredients
1 cup fresh strawberries (hulled)
1 cup heavy whipping cream
3 tbsp powdered erythritol
1 tsp unflavored gelatin
2 tbsp cold water
Instructions
1. Bloom the gelatin in cold water for 5–10 minutes.
2. Puree the strawberries until smooth, then heat gently in a saucepan.
3. Stir the bloomed gelatin into the warm strawberry puree and mix until dissolved. Let it cool.
4. Whip the cream with powdered erythritol until stiff peaks form.
5. Gently fold the cooled strawberry mix into the whipped cream.
6. Spoon into jars and refrigerate 4 hours or overnight.
Notes
Make sure the puree is completely cool before folding to prevent deflating the whipped cream.
For extra flavor, add a touch of lemon zest or vanilla extract.
