This Keto Strawberry Cream Cheese Cobbler is sugar-free, low-carb, and bursting with fresh summer flavor. Rich, fruity, and perfect for a cozy dessert.
Ingredients
1 ½ cups sliced fresh strawberries
1 block (8 oz) cream cheese, cut into chunks
2 large eggs
¼ cup melted butter
1 tsp vanilla extract
¾ cup almond flour
⅓ cup monk fruit sweetener
1 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
2. Spread strawberries evenly on the bottom.
3. Dot cream cheese chunks over strawberries.
4. In a bowl, mix eggs, butter, vanilla, almond flour, sweetener, baking powder, and salt.
5. Spoon batter over fruit mixture without fully covering.
6. Bake for 30–35 minutes until golden and set.
7. Let cool 10 minutes before serving.
Notes
You can sub raspberries or blueberries for strawberries.
For dairy-free, use almond-based cream cheese and coconut cream.
