Description
A creamy, comforting keto soup recipe with coconut milk, chicken, and spinach – low in carbs and high in flavor.
Ingredients
1 lb chicken thighs, diced
1 can (13.5 oz) unsweetened coconut milk
4 cups chicken bone broth
2 cups fresh spinach
1 medium onion, chopped
3 garlic cloves, minced
2 tbsp olive oil
1 tsp smoked paprika
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Sauté onion and garlic until fragrant.
3. Add chicken and cook until lightly browned.
4. Pour in bone broth and bring to a simmer.
5. Stir in coconut milk and spinach.
6. Season with smoked paprika, salt, and pepper.
7. Simmer for 20 minutes until chicken is cooked through.
8. Serve hot with desired garnish.
Notes
For thicker soup, add xanthan gum or pureed cauliflower.
Store in the fridge for up to 4 days or freeze for 2 months.
Add leafy greens fresh if freezing.
