Description
A low carb pizza night alternative with common ingredients. Great for meal prep and the entire family. No Cauliflower.
Ingredients
2 lbs Italian Sausage, hot or mild, casing removed
2 tbsp Olive Oil
1 medium Yellow Onion, sliced thinly
1 large bell pepper, sliced (red and green suggested)
8 oz baby bella mushrooms, optional
1/2 tsp Natural Ancient Sea Salt
1/2 tsp Black Pepper
5 oz Uncured beef pepperoni
2 cups Tomato Basil Sauce
3 cups Pizza Blend Cheese
Instructions
1. Preheat your oven to 425 degrees.
2. Heat a large skillet to medium-high heat. Brown the sausage and set aside.
3. In the same pan, add olive oil, onion, bell pepper, mushrooms, salt, and pepper. Sauté until translucent and tender.
4. Layer the casserole in a 9×13 baking pan: half the sausage, 1 cup sauce, half the vegetables, 1.5 cups cheese, and half the beef pepperoni. Repeat layers.
5. Bake in the oven for 15-20 minutes until the cheese is melted and browned.
Notes
Use any bell pepper colors you prefer.
For a spicier dish, choose hot Italian sausage.
