Description
A creamy, tropical keto piña colada made with coconut cream, pineapple extract, and sugar-free sweetener for a refreshing low-carb treat.
Ingredients
1/2 cup coconut cream (unsweetened)
1 cup ice
1 tbsp sugar-free sweetener (erythritol or monk fruit)
1 tsp pineapple extract or sugar-free pineapple syrup
1.5 oz white rum (optional)
Toasted coconut, lime wedge for garnish
Instructions
1. Add coconut cream, pineapple extract, sweetener, and rum (if using) to blender.
2. Add ice and blend until smooth.
3. Taste and adjust sweetness or pineapple flavor as needed.
4. Pour into chilled glass and garnish with toasted coconut and lime wedge.
Notes
For a virgin version, skip rum and replace with cold unsweetened coconut water or extra ice.
Store blended mix in fridge for up to 24 hours; re-blend before serving.
