A low-carb treat reminiscent of classic cookies, perfect for those with a sweet tooth.
Ingredients
1 cup Mozzarella cheese, shredded
2 large eggs
2 tablespoons Swerve confectioners sugar substitute
2 tablespoons Unsweetened cocoa powder, preferably black cocoa powder
3 ounces Cream cheese, softened
3 tablespoons Heavy whipping cream
3 tablespoons Swerve confectioners sugar substitute
Instructions
1. Preheat a mini waffle maker.
2. In a blender, puree mozzarella, eggs, 2 tablespoons Swerve, and cocoa powder until smooth.
3. Pour 1/4 of the batter into the waffle maker, cooking for 3-4 minutes until done.
4. Blend cream cheese, heavy cream, and 3 tablespoons Swerve until smooth.
5. Spread topping on each chaffle and serve.
Notes
A smoothie blender works best for combining the chaffle ingredients.
Use two waffle makers to speed up cooking.
Freeze chaffles for up to 6 months.
