A warm, crispy, and guilt-free treat that tastes just like Grandma’s cinnamon donuts.
Ingredients
1 large egg
1/2 cup shredded mozzarella cheese
2 tablespoons almond flour
1 tablespoon cream cheese, softened
1 teaspoon vanilla bean paste
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
2 tablespoons sugar-free sweetener
1 pinch salt
2 tablespoons powdered sugar-free sweetener (for glaze)
1–2 tablespoons unsweetened almond milk (for glaze)
1/2 teaspoon vanilla bean paste (for glaze)
Instructions
1. Preheat the mini waffle maker to medium-high heat.
2. In a mixing bowl, whisk the egg until frothy and smooth.
3. Add cream cheese and whisk until no lumps remain.
4. Stir in mozzarella, almond flour, vanilla bean paste, cinnamon, baking powder, sugar-free sweetener, and salt.
5. Lightly grease waffle maker, pour half the batter, and cook for 3-4 minutes until golden brown.
6. For glaze, mix powdered sweetener, almond milk, and vanilla bean paste until smooth.
7. Drizzle glaze over warm chaffles and serve immediately.
Notes
For extra crispiness, cool chaffles on a wire rack before glazing.
Store unglazed chaffles in an airtight container in the fridge for up to 3 days.
Freeze unglazed chaffles and toast from frozen for a quick treat.
