Description
This Keto Cranberry Orange Bread smells and tastes like the holidays. It’s bursting with bright cranberries and zesty orange, and has only 3g net carbs per slice!
Ingredients
3/4 cup coconut flour
2/3 cup brown sugar replacement
1/3 cup unflavored whey protein powder
2 tsp baking powder
1/4 tsp salt
1/2 cup butter, melted
6 large eggs
2 tsp freshly grated orange zest
1 tsp orange extract
1/2 tsp vanilla bean paste
1/3 cup water
1 cup fresh cranberries, chopped in half
1/2 cup chopped walnuts or pecans (optional)
Instructions
1. Preheat the oven to 350ºF and grease an 8×4 inch loaf pan.
2. In a large bowl, whisk together coconut flour, sweetener, protein powder, baking powder, and salt.
3. Stir in butter, eggs, orange zest, and extracts until well combined. Then stir in water until batter is smooth. If too thick, add more water 1 tablespoon at a time.
4. Stir in cranberries and walnuts. Transfer batter to prepared pan and smooth the top.
5. Bake for 50 to 60 minutes, until golden brown and just firm to the touch. Let cool at least 30 minutes, then transfer to a wire rack to cool completely.
Notes
Store the bread tightly wrapped on the counter for 3 days or in the fridge for up to a week.
You can also freeze it for several months.
