A delightful, low-carb twist on a classic churro using a cheesy waffle base.
Ingredients
1 egg
1/2 cup shredded mozzarella cheese
1/4 cup almond flour
2 tablespoons Swerve granular
1/8 teaspoon baking powder
2 tablespoons melted butter
3 tablespoons Swerve granular
1 teaspoon cinnamon
Instructions
1. Combine the egg, cheese, almond flour, baking powder, and 2 tablespoons of Swerve in a bowl and mix well.
2. Preheat a mini waffle iron and lightly grease it. Pour enough batter to cover the bottom. Cook each chaffle until crisp.
3. Melt the butter and mix with 3 tablespoons of Swerve and cinnamon for the topping.
4. Cover each chaffle with the churro topping and serve immediately.
Notes
Do not overfill the waffle iron; the batter will expand.
Apply the churro topping right before serving for the best texture.
