Thick, creamy, beefy and loaded with cheesy flavors, this keto Cheeseburger Soup is a hearty meal that’s perfect for lunch or dinner!
Ingredients
1 pound lean ground beef
1/2 cup diced onion
1/2 cup diced celery
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups low sodium beef broth
4 ounces cream cheese
2 cups shredded sharp cheddar
1 cup heavy whipping cream
2 tablespoons sour cream
Instructions
1. Brown the ground beef in a Dutch oven or soup pot.
2. Add onion, celery, and garlic. Cook until onions are translucent, about 5-6 minutes.
3. Add dried oregano, basil, and parsley. Cook for 1 minute.
4. Spoon out excess fat, add beef broth, and bring to a boil. Simmer for 15 minutes.
5. Turn off heat, add cream cheese, and stir until melted.
6. Add shredded cheddar and stir until melted.
7. Add heavy whipping cream and heat until just simmering.
8. Whisk in sour cream and serve hot.
Notes
If beef is lean, add avocado oil for browning.
Garnish with favorite cheeseburger toppings for extra flavor.
