Ingredients
1 large head cauliflower, cut into bite-sized florets
4 tablespoons butter
2 cloves garlic, minced
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup heavy cream
1/4 cup milk
Salt, to taste
Black pepper, to taste
Optional: paprika, chives for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. Steam or boil cauliflower until tender, about 5-7 minutes. Drain well.
3. In a large saucepan, melt butter over medium heat. Add garlic and cook for 1 minute.
4. Stir in cheddar, Monterey Jack, heavy cream, and milk until smooth.
5. Season with salt and pepper.
6. Add drained cauliflower to the sauce and mix gently.
7. Pour into a baking dish and bake for 15-20 minutes, until bubbly and golden.
8. Garnish with paprika and chives if desired.
Notes
For a crispier topping, add crushed turkey bacon rinds or keto breadcrumbs before baking.
