Description

These Healthy Low Carb Breakfast Burritos are an easy, homemade make-ahead breakfast idea to add to your meal prep menu!


Ingredients

Scale

8 large eggs

1/2 cup heavy whipping cream

2 tbsp butter

1 lb turkey bacon

7 low carb tortillas

1 1/2 cups cheddar cheese, shredded

1/4 cup white cheddar cheese, shredded

1/2 tsp salt

1/2 tsp pepper


Instructions

1. Preheat oven to 350°F and grease a 9×13 casserole dish.

2. Cook turkey bacon until crispy, drain, and crumble into pieces.

3. Melt butter in a skillet over medium heat.

4. Whisk together eggs, heavy cream, salt, and pepper.

5. Pour egg mixture into skillet and scramble gently, removing from heat slightly undercooked.

6. Spoon eggs onto tortillas, add turkey bacon and cheddar cheese, and roll burritos.

7. Place rolled burritos seam-side down in the casserole dish.

8. Top with reserved cheeses and turkey bacon.

9. Bake immediately for 10-15 minutes, or cover and refrigerate to bake later for 15 minutes covered, then 5-7 minutes uncovered.

Notes

Can be frozen for up to 2 months.

Reheat in microwave or oven as needed.
