A comforting keto-friendly skillet full of flavor and warmth.
Ingredients
1 1/2 pounds ground beef (80/20 lean)
1 small yellow onion, diced
1 green pepper, diced
1 red pepper, diced
1 yellow pepper, diced
2 tablespoons chili powder
2 teaspoons cumin
1 – 8 ounce bag of Miracle Rice
1 1/2 cups beef broth
1 cup cheddar cheese, shredded
1/2 cup sour cream
1 avocado, sliced
1 bushel of cilantro, chopped
Instructions
1. Rinse the Miracle Rice in a strainer to remove packaging liquid.
2. In a large cast-iron skillet over medium heat, cook the rice until it dries. Set aside.
3. In the same skillet, cook ground beef, onion, and peppers until beef is browned and onions are translucent, about 7 to 8 minutes.
4. Stir in chili powder and cumin.
5. Add beef broth and rice to the skillet. Bring to a boil.
6. Simmer for 5 to 10 minutes until liquid reduces.
7. Turn off heat, stir in cheddar cheese until melted.
8. Serve warm with extra cheese, sour cream, avocado, and cilantro.
Notes
Miracle Rice helps keep the dish low carb.
Adjust seasoning to taste.
