Description
A hearty and comforting homemade lasagna soup with all the flavors of classic lasagna, ready in under an hour.
Ingredients
1 lb ground beef
1/2 lb Italian sausage
1 onion, diced
4 garlic cloves, minced
1 can (28 oz) crushed tomatoes
4 cups chicken or vegetable broth
8 lasagna noodles, broken into pieces
1 tbsp Italian seasoning
Salt and pepper to taste
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil for garnish
Instructions
1. In a large Dutch oven, brown ground beef and sausage over medium heat until cooked through. Drain excess fat.
2. Add diced onion and minced garlic; sauté until fragrant and softened.
3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
4. Bring to a simmer; cook for 15 minutes to develop flavor.
5. Add broken lasagna noodles; cook until al dente, about 10 minutes.
6. Mix ricotta, mozzarella, and Parmesan in a small bowl.
7. Ladle soup into bowls; top with cheese mixture and garnish with basil.
Notes
For a lighter version, use ground turkey or chicken.
Vegetarian? Swap meat for mushrooms and lentils.
To freeze, omit noodles and add them fresh when reheating.
