Description
These cottage cheese pancakes are a healthy, easy-to-make breakfast treat with a unique custardy texture.
Ingredients
1 cup cottage cheese
3 large eggs
1 tablespoon pure maple syrup
1/4 teaspoon vanilla bean paste
Pinch of fine sea salt
Butter or coconut oil for cooking
Instructions
1. In a medium bowl, whisk the eggs until combined.
2. Add cottage cheese, maple syrup, vanilla, and salt. Mix until just incorporated.
3. Heat a non-stick pan over medium-low heat and melt a small amount of butter.
4. Pour 1/4 cup of batter onto the pan, spreading gently.
5. Cook until edges are golden, then flip and cook the other side.
6. Repeat with remaining batter, adding more butter as needed.
Notes
Do not over-mix the batter; visible cottage cheese curds are ideal.
Use medium-low heat to prevent burning.
