Description

A cozy and healthy diabetic apple crisp made with tart apples, a golden oat-almond topping, and low-glycemic sweeteners.


Ingredients

Scale

3 medium Granny Smith apples, thinly sliced

2 medium Honeycrisp apples, thinly sliced

1 tsp ground cinnamon

1 tbsp lemon juice

2 tbsp erythritol or monk fruit sweetener (for apples)

3/4 cup rolled oats

1/3 cup almond flour

1/4 cup Swerve Brown or Lakanto Golden

1/4 cup melted coconut oil

1/2 tsp vanilla extract

1/8 tsp sea salt


Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.

2. In a large bowl, toss sliced apples with lemon juice, cinnamon, and sweetener.

3. Transfer apples into prepared dish, spreading evenly.

4. In a separate bowl, mix oats, almond flour, brown sweetener, sea salt, vanilla, and coconut oil until crumbly.

5. Sprinkle topping evenly over the apples.

6. Bake for 35–40 minutes until topping is golden and apples are soft.

7. Cool slightly and serve warm, optionally with coconut cream or Greek yogurt.

Notes

You can replace coconut oil with avocado oil or ghee.

For zero added sugar, omit sweetener in the filling and use sweeter apple varieties.

Store leftovers in the fridge for up to 3 days; reheat before serving.
