A refreshing summer salad featuring cucumbers, mozzarella, tomatoes, and basil — a twist on the classic Caprese.
Ingredients
2 cups sliced English or Persian cucumber
1 cup cherry tomatoes, halved
1 cup mozzarella balls or sliced fresh mozzarella
1/4 cup fresh basil leaves
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic glaze
Salt and black pepper to taste
Instructions
1. Slice the cucumbers and halve the cherry tomatoes.
2. Arrange cucumbers, tomatoes, and mozzarella on a platter.
3. Scatter fresh basil leaves across the top.
4. Drizzle with olive oil and balsamic glaze.
5. Season with salt and pepper to taste.
6. Serve immediately or chill for 15 minutes.
Notes
Use heirloom tomatoes for color variety.
Add avocado or red onion for extra flavor.
